Buses from Fiumicino run from 05:00 AM till 02:00 AM, with an average interval of 20-30 minutes, depending on a transport company.
You can find bus stops near T2 and T3 terminals. There are four terminals:

Tips: It would be less costly to exchange currency before the trip. But if you arrived without euro, you can exchange at a bureau de change in Rome, cambio. Banks or Cassa di risparmio are open until 4:00 PM.

Different kinds of trains can take you to the center of Rome: from high-speed Leonardo Express, Frecciarossa, Frecciargento to regional train, Regionale.
Trains run from 6:00 AM till midnight, depending on their type.
High-speed train is faster and more expensive, it is 30 minutes for €14 and more against an hour for €8 on a regional one.
Leonardo Express , Frecciarossa and Frecciargento trains arrive to Termini railway station.
Regional train stops at Trastevere, Ostiense and Tiburtina railway stations.
All the trains leave from Fiumicino Airport railway station. Leonardo Express takes from track 2.
Tickets can be purchased on Trenitalia web-site or at the airport ticket office. Remember to print out your electronic ticket, just in case!

You can also drive a rented car from the airport to Rome. Book a rental car without a driver in advance or at the airport. Basic insurance is included in the price.
